Roasted Cauliflower, Spinach & Date salad

Ingredients:

1 Cauliflower head

Bag of Baby spinach

1 Red onion

1/4 cup of raw Almonds 

1/4 cup of Pepitas 

Handful of Fresh or dried Dates chopped

1-2 Tbs of Tahini 

2-3 Tbs Olive oil

Salt


 
Method:


 
Turn on the oven to 180-190 degrees. Chop cauliflower into florets, toss through olive oil then season with salt and place on a baking tray and put in the oven for 15 mins.


 
Slice red onion and add to the cauliflower tray for an additional 15-20 mins until cauliflower is nice & crispy.


 
While the cauliflower is in the oven, chop the dates & chop the raw almonds roughly. Place baby spinach in a large bowl.


 
Once cauliflower is cooked, toast through the spinach, add the dates, almonds & pepitas.


 
Serve as is with a drizzle of tahini or along side some lamb, chicken or fish for additional protein.
