Spicy Peanut Chicken Bowls

Ingredients:

500gms Chicken breast

1 packet of Soba noodles or rice noodles

Steamed broccoli

Kale slaw or raw shredded purple cabbage, Carrot & kale

Coriander (Handful)

2 tbs Soy sauce/Tamari

1 teaspoon of grated ginger 

1 Teaspoon of finely chopped garlic

Spicy Peanut Sauce:

2-3 heaped Tbs of good quality peanut butter (Crunchy or smooth)

1 teaspoon of sriracha (chilli sauce)

Splash of soy sauce or tamari

Splash of rice wine vinegar

Splash of maple syrup or sweetener

1 Tbs fresh lime or lemon juice

2-3 Tbs of water


 
Method:

Slice chicken breast in half length ways and marinate in soy or tamari sauce, ginger & garlic. Set aside or pre marinate for an hour or overnight.

Prepare broccoli to steam. Boil water for noodles and place in a bowl to soften.


 
Place chicken on a hot pan/grill with a little olive oil. Cook through until a nice crust is formed on the outside.


 
While chicken is cooking, place the peanut

Sauce ingredients into a small bowl and whisk together forming a smooth creamy texture sauce. Whisk for about a minute.


 
Remove chicken from pan and slice on a diagonal.


 
Prepare Bowls with kale slaw (not dressed) soba noodles or noodles of your choice, steamed broccoli & grilled chicken. Drizzle with spicy peanut sauce and top with coriander. 


 
Some other great additions or swaps are bean shoots, brown rice, Quinoa, crushed peanuts and cucumbers.
