2 cups rocket
3 beetroots (cooked, in the packet)
3 Medium carrots
1 bunch radish
2 green apples
1 cup alfalfa
Parsley or coriander to garnish
1/4 cup freshly squeezed lemon juice
1/3 cup extra virgin olive oil
1 clove garlic, minced
Sprinkle of chili flakes
Julianne or thinly sliced all the vegetables except the rocket and alfalfa.
First add the rocket into a large salad bowl, then all of the remaining vegetables except the beetroot. Toss gently.
Scatter the beetroot over the top.
Combine the dressing ingredients in a small jug, and pour over the salad.
Garnish with the alfalfa sprouts and herbs.
This would be a great side to any protein of your choice to make it a complete meal.
If you want to keep some in the fridge for the next day, simply keep some aside, without the dressing. It will keep in the fridge for 2 days.
