Blueberry, Lemon, Coconut & White Chocolate Loaf

Recipe:


Ingredients ⬇️⬇️⬇️

1 & 3/4 cup of whole meal self raising flour

1/2 cup organic shredded coconut

1-2 cups organic Blueberries

1/2- 1 cup of White choc chips (as much as you like)

1 mashed ripe banana

1/4 cup olive oil

1/2 cup organic almond milk (or milk of your choice)

1/4 cup organic natural Yoghurt

1/2 cup organic Maple syrup

1 tbs finely grated lemon peel & a lemon squeeze in the mix

1 tsp Vanilla bean or extract

2 organic Eggs

2 tsp baking powder


Method:

Preheat oven to 180 degrees.


Mix all of the dry ingredients together in one bowl. Mash banana and then whisk all the wet ingredients together in another bowl.


Combine them together and add Blueberries and white choc chips & grated lemon peel and fold through.


Place baking paper in a loaf tin then pour mixture in. Top with extra Choc chips, Blueberries and coconut.


Bake for 40-50 mins until you can poke a stick through the centre and it comes out clean. Keep an eye on it, to not over cook it otherwise it will be dry.
