Mexican Chicken Bowl


500gms-1 kg of Chicken breast Packet fo taco seasoning or make your own 1/2 onion and capsicum 1 jar of salsa 1 cup of grated chicken more or less depending on how much cheese you you like

Feel free to add ingredients - Build your own taco bowl the way you like it. Brown rice, cauliflower rice, quinoa Broccoli, kale slaw, corn, guacamole, natural yoghurt, coriander, chilli sauce Slice chicken & place on a tray, slice onion and capsicum place in the middle of the tray with some olive oil.

METHOD Place the taco seasoning on the chicken. I only put a touch on the kids chicken as it may be a little spicy. Pour the jar of salsa over the chicken pieces, however on the kids I put tomato paste. Then sprinkle all the chicken with cheese. As much or as little as you like. While doing all of that, cook up some brown rice, cauliflower rice or quinoa and in another pot put corn and steam some broccoli. Place the chicken tray in the oven for about 25-30 mins until cheese is golden on top and chicken cooked through. You can add whatever veggies/toppings you like. Get creative or add your fav things!! No rules, just add lots of veg and make it to suit your dietary needs and taste buds. These are fantastic to put in containers which are great for lunches for 1-3 days.
